So in the middle and at the end of the movie are they basically hinting at that Egg Chen was also immortal like Lo Pan?

Yeah, there’s an implication he was immortal. At the very least, he had been fighting Lo Pan for many years.

Next time I watch I'll keep an eye out. He does say something to the effect of "You never could beat me" to Lo Pan.
